Soup time!

Yesterday's Weight: 208.2
Today's Weight: 206
Difference: -2.2lbs

Holy cow! Didn't expect that much of a drop in one day! I hope it stays that way. Anyway, I just finished putting togeather a soup because today is COLD! Fall is definately here. I chopped up tons of veggies and added all the ingredients into my croc pot and put it on High. I don't know yet how it will taste but it smells AWESOME. So here is the recipe if you are interested:

Cold Day Soup

Ingredients:
  • 3C Progresso reduced sodium chicken broth
  • 3C V8-low sodium
  • 1 envelope Lipton onion soup mix
  • 1 bay leaf
  • 3 stalks celery, chopped
  • 2C fresh green beans, cut into 1.5" peices
  • 3 cloves garlic, chopped
  • 1/2 large yellow onion, chopped
  • 1-1/2C baby carrots, chopped
  • 1 zucchini, chopped
  • 7 baby red potatoes with skin, chopped
  • 1/2 head of green cabbage, chopped
  • 1 can chickpeas, drained
  • 1 can no salt diced tomatoes (not drained)
  • 1 can light red kidney beans, drained
  • 1 can great northern beans, drained
Directions:
  • Place liquids, bay leaf, and onion soup mix in croc pot. Mix together. 
  • Chop and add all veggies and beans. Add to croc pot. 
  • Set croc pot to High. Place lid on top. 
  • Mix every so often. 
  • Its finished when the veggies are the texture you desire. 
I'm pretty excited about my soup. My hands smell so good from all the veggies. I filled up the croc pot so I will have a LOT of soup. Plus, I'll be the only one eating it because Vic doesn't like all the veggies lol.
